COMPANY

Our client, Food and Nutrition Science and Technology Capability, a Division of the Department of Defence is based in beautiful Tasmania and boasts state of the art facilities including R&D and Manufacturing.

The Food and Nutrition Science and Technology Capability (FNSTC) within the Defence Science and Technology (DST) Group provides Defence with science and technology (S&T) advice and research in support of Defence fresh and combat ration feeding systems. It also manufactures a range of specialised foods for use in combat ration packs. Due to internal movement, they are in need of a Food Production Coordinator to join their Food Manufacturing team.

 

THE ROLE

This role is an ongoing contract and will require the successful candidate to work Monday to Friday, an average of 37.5 hours per week. It is initially a one year contract, up to 2017, that may be extended for a further three periods of 12 months or parts thereof.

As the Food Production Coordinator, the successful candidate will be a member of the Rations Manufacturing Group. Some of the duties associated with this role include:

Coordination of food production activities:

  • scheduling of food production staff;
  • planning and scheduling of production runs;costing of
  • production activities (annual basis); and
  • scheduling equipment maintenance (e.g. test and tag, forklift service, X-ray service).

Cooking of specialised food products (meals and rice):

  • set up ingredients for cooking run;
  • cook food products using bulk cooking vessels; and
  • conduct checks and enter data into Hazard Analysis Critical Control Point (HACCP) database.

Operate freeze dryer and support equipment, including operator checks:

  • load, operate and unload freeze dryer;
  • conduct operator checks on freeze dryer, refrigeration system, cooling tower, boiler, x-ray machine and other production equipment;
  • operate and conduct checks on packing equipment (including vacuum sealer, label printer, form-fill sealer); and
  • enter results of checks and related information into HACCP database.

Ordering, receipt and dispatch of ingredients, food products and supplies:

  • estimate requirements for ingredients and other supplies;
  • obtain quotes and place orders;
  • load and unload transport vehicles and containers;
  • inspect ingredients and other supplies upon receipt;
  • prepare product for dispatch, including documentation; and
  • keep records as required for receipt and dispatch activities.

Quality assurance and control:

  • ensure quality records are updated as required;
  • maintain stocks of food production supplies, including cleaning supplies, gloves, packaging supplies and labelling materials;
  • report equipment breakdowns and maintenance requirements to the production manager;
  • report product quality issues to the production manager; and
  • support and contribute to workplace health and safety activities.

 

SELECTION CRITERIA

  • You must be self-motivated to ensure efficient use of time. You will be willing to work within a team environment with varying degrees of individual effort depending on the task at hand.
  • A willingness to share knowledge and provide support to other team members is an important element of the job.
  • To be considered for this position you must meet the following criteria:
  • You MUST BE an Australian citizen! PR IS NOT SUFFICIENT!
  • Have relevant qualifications in the area of Food Technology, Food Production, Chef or similar
  • Experience in a similar role and the mass production of food under appropriate quality systems
  • Excellent interpersonal skills, including the ability to work as a team member or individually under general direction.
  • Excellent written and oral communication skills and a demonstrated ability to complete tasks on time.
  • Competence in the use of computers and computer software, particularly Microsoft Word and Excel, for the purposes of recording data and updating laboratory records.
  • Be willing to undergo an background security check
